G.F. Oatmeal Cake
CAKE:
1 stick of butter
1 cup BOBS RED MILL OATS
1 1/4 cup boiling water
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 1/2 cup BOBS RED MILL 1:1 Gluten Free Flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
TOPPING:
4 tablespoons butter
1/2 cup evaporated milk
1 cup sugar
1 cup coconut
1 teaspoon vanilla
1/2 cup pecans, OPTIONAL
Add butter, oats & water to a bowl. Allow to sit, covered for about 20 minutes. Or until the butter is melted and the oats have plumped. (Oatmeal consistency)
To the oatmeal mixture add the remining CAKE ingredients.
Pour into a greased 9x13 pan and bake in a 350 degree preheated oven for approximately 30 minutes.
Meanwhile, combine the TOPPING ingredients. Allow the cake to cool slightly, add the topping mixture and put under the broiler for about 1 minute or until the coconut starts to brown. !!!Don’t walk away. This happens fast!!!
